Ingredients
1 cup quinoa
3 Tomatoes
½ cup feta cheese or grated parmesan cheese
½ cup sliced black olives
2 large carrots
1 tablespoon of oil
Other suggestions for vegetables to add:
Avocado
Beans
Corn
Zucchini
Pesto
Cilantro
Cucumber
Arugula
*Add anything you like in the desired quantity
Preparation
Cook the quinoa according to the bag’s instructions
Once its cooked, put it in a large bowl, add the oil (to prevent the quinoa from clumping), mix it, and leave to cool
If using any hard vegetables (ex. carrots), place about ½ inch of water into a covered microwave-safe container, place the carrots inside, and microwave for approx. 4 minutes, or until slightly softened.
Chop all the toppings (the tomatoes, carrots, etc.) into small bite-size pieces and mix them into the quinoa
Mix the cheese in
Enjoy it cold, or heat it in the microwave to eat it warm!
Storage Indications: You can store the quinoa in a tableware. It's good for many days after you first make it. You can add it to a salad also.
