Ingredients

  • 2 lbs of ground beef

  • ½ cup bread crumbs (gluten free breadcrumbs for GF version)

  • 1/4 cup parmesan cheese

  • 1 egg

  • 3 large carrots

  • (Optional) 4 cups fresh spinach leaves

  • ½ teapoon salt

Preparation

  1. Preheat oven to 425 degrees Fahrenheit

  2. Grate the 3 carrots with a hand grater. Then, cut them into even smaller pieces with a knife. You want the smallest pieces possible.

  3. If using, blend the spinach until it forms a paste.

  4. In a large ball add all the ingredients and mix with your hands or a spoon until it forms an even mixture

  5. Lay parchment paper on a cooking tray

  6. Form 1 inch by 1 inch balls of the dough and place them on the pan

  7. Place in the oven for about 20 minutes, or until thoroughly cooked

  8. Enjoy!


Storage Indications: You can reheat the meatballs in the microwave days after you make them
