Ingredients
2 lbs of ground beef
½ cup bread crumbs (gluten free breadcrumbs for GF version)
1/4 cup parmesan cheese
1 egg
3 large carrots
(Optional) 4 cups fresh spinach leaves
½ teapoon salt
Preparation
Preheat oven to 425 degrees Fahrenheit
Grate the 3 carrots with a hand grater. Then, cut them into even smaller pieces with a knife. You want the smallest pieces possible.
If using, blend the spinach until it forms a paste.
In a large ball add all the ingredients and mix with your hands or a spoon until it forms an even mixture
Lay parchment paper on a cooking tray
Form 1 inch by 1 inch balls of the dough and place them on the pan
Place in the oven for about 20 minutes, or until thoroughly cooked
Enjoy!
Storage Indications: You can reheat the meatballs in the microwave days after you make them
