Ingredients

  • 2 large potatoes (ideally russet potatoes)

  • ≈2 tablespoons olive oil

  • ≈1 teaspoon salt

  • Toppings (suggestions below):

  • Cheese

  • Sour cream

  • Diced tomatoes

  • Cooked broccoli

  • Bacon

  • Sausage

  • Black beans

  • Olives

Preparation

  1. Preheat the oven to 450º F

  2. Wash and clean the potato’s exterior well, removing all dirt and undesired parts.

  3. With a fork, poke about 10 holes all over the potatoes

  4. Line a baking sheet with tinfoil or non-stick paper

  5. With your hands, rub olive oil over the potatoes and then sprinkle on the salt

  6. Place the potatoes on the baking sheet and put them in the oven for about 45 minutes, or until the insides of the potato feel soft and a knife can easily slide in and out of the center of the potato.

  7. Remove from the oven and let cool.

  8. Cut a slit along the long end of the potato that is deep about half the potato’s height. Pull open the two parts.

  9. Add your favorite toppings. Some suggestions:

  • Cheese (put potato in oven for 2 minutes with cheese to melt it on top)

  • Sour cream

  • Ham, bacon, or other meat

  • Black beans, corn, onion, chopped tomato, grilled bell pepper slivers

  10. Enjoy!


Storage Indications: You can store the leftover potatoes in a tableware container and microwave them the following day. Don’t add toppings and microwave them. Microwave first, toppings second.
