Ingredients

For the salmon:

  • One small fresh or frozen salmon fillet (about 12 oz)

  • ½ cup breadcrumbs

  • 2 tablespoons of olive oil

  • 5 tablespoons lemon or lime juice

  • Optional: approx. 3 tablespoons of capers

  • Salt and pepper to taste

For the asparagus:

  • 0.5 lbs asparagus

  • 3 tablespoons olive oil

  • 1 teaspoon salt

  • 1 teaspoon pepper

  • (Optional) lemon juice for serving

Preparation

For the salmon:

  1. Preheat the oven to 400 ℉

  2. Place the entire salmon fillet in a glass or metal pan

  3. Pour the lemon juice and olive oil over the salmon as evenly as possible

  4. Sprinkle the breadcrumbs over the salmon

  5. If desired, sprinkle the capers over the salmon

  6. Put the salmon into the oven for approx. 15-17 minutes, or until it is thoroughly cooked and a white-pinkish color. Another way to see if it is cooked is to press down on the top of the salmon. If it flakes slightly, then it is cooked.

  7. Enjoy!

For the asparagus:

  1. Preheat oven to 400º F

  2. Drizzle the olive oil at the bottom of a glass pan or sheet tray

  3. Lay out the asparagus on top

  4. Sprinkle with salt and pepper

  5. Put into the oven for approximately 12-15 minutes, or until they have reached your desired degree of tenderness

  6. Serve alongside the salmon and enjoy! You can add lemon juice when serving.


Storage Indications: Store leftover salmon and asparagus in a tableware or wrapped in tinfoil.

Suggestion: You can take the leftover salmon and slice it into smaller pieces to put it into a salad or taco. If desired, it can be reheated in the microwave. Reheat the asparagus in the microwave for about 45 seceonds or in a pan in the oven at 350º F
